Quick Brocoli Soup Recipe... Because Winter Is Just Starting

Broccoli Carrot soup might not look pretty but it sure tastes good. One of the reasons I love to make it is because it's quick and easy. It's a hearty soup that will fill you up! Not to mention that broccoli and carrots contain all the essential vitamins your body craves.
Ingredients:
2 tablespoons olive oil
1 1/2 pound broccoli
1 large onion
salt and freshly ground black pepper
2 carrots
4 cups low-sodium vegetable broth
1/2 cup almond milk
store bought croutons
1. Heat olive oil in a medium pot over medium-high heat. Add chopped onion and sauté for 4 minutes until translucent. Add chopped carrots, broccoli, salt, pepper; sauté for 3 more minutes. Add vegetable stock and bring to boil.
2. Simmer for about 13 minutes. Pour in almond milk. Simmer for 2 more minutes.
3. Transfer the hot soup to a blender, working in batches. Blend and serve hot with croutons.
